Hey friends. I need some new recipes. I know there are TONS of cooking websites online so I’ll look there but what is your favorite meal? Here are just about all the things I cook:

-Chicken Pot Pie
-Spaghetti
-Brown Rice w/ pork
-Tacos
-Lasagna
-Kielbasa pasta
-Tuna Patti’s (haha sis)
-White Chili
-Red Chili
-Skillet Chicken
-Taco Soup
-Donna’s Chicken (also known as cream of chicken w/ chicken pieces and ritz crackers/poppyseeds)
-Breakfast pizza
-Veggie Bake w/ chicken

Amanda, if you make something often and it’s not on this list, tell me what it is.

As you can probably tell, I like to cook things that are really easy and fast and with easy ingredients. We are super burnt out on all of these meals so I need help!

I need to go to the grocery!

The first thing I notice that is missing is enchiladas. I make mine the easiest and tastiest way possible.

Brown a pound of hamburger
Mix cooked burger with 3/4 of one regular sized can of tomato soup and 3/4 of one small can of enchilada sauce (I use the yellow can ((old el paso?)) in mild)
Put meat/sauce mix into tortilla shells and roll them up
Place into casserole dish and pour the rest of the sauce over the top.
Sprinkle with “Mexican” Cheese. You can also mix cheese in with the burger/sauce inside the enchiladas but I don’t like mine THAT cheesy.

Hopefully this helped. I like using the tomato soup because it adds a tomato flavor but is not spicy. I can’t handle spicy.

I also really like to buy Chicken breasts, pour Italian dressing on top, and bake.

I make shrimp scampi a lot and it’s really easy. It’s Tyler Florence’s recipe on foodnetwork.com (http://www.foodnetwork.com/recipes/tyler-florence/shrimp-scampi-with-linguini-recipe/index.html) You can catch shrimp on sale at Kroger. It doesn’t save well, so I usually make about a pound of shrimp, but only half (or less of the pasta). I keep the rest the same so it’s really saucy. You can do less shrimp if you don’t think you’ll eat it all.

I know you don’t make fish often, but shrimp is really easy to saute. You can sub out the white wine for chicken broth or even use cooking white wine.

Anth makes chicken and rice stir fry a lot with frozen stir fry veggies and an egg. Kinda like he did for us that night.

I also LOVE the Buitoni pastas, specifically cheese tortellini and the new ravioli (cheese again is good).

I make stuffed peppers a lot. Fry up hamburger or turkey burger and cook with your favorite pasta sauce for a while. You can add veggies like garlic, onions, mushrooms, peppers or anything to get more veggies in there. Microwave the peppers in a glass dish (with the top and insides cut out) with a tad bit of water and covered in saran wrap to make them soft. Top with cheese and bake til the cheese melts. If your husband is Anthony, serve the meat with pasta and you eat the pepper!

I’m sure I’ll think of some more, but that’s some go to’s that came off the top of my head.

our staples are:
ice cream
frozen pizza
frozen chicken
eggos
campbells healthy request homestyle chicken noodle soup
cereal
guacamole
baked potatoes topped w/ cheese and bacon and like 5 tablespoons of butter….i consider that a meal……hahahaa
anything dipped in ranch or ketchup is good too

yeah we are healthy.

here are some things that we do a lot:

mini meatloafs
-1 lb ground turkey or ground beef
-1 egg
-1/2 of a sleeve of saltine crackers
-(a little) ketchup
-(a little) seasoned salt
-salt and pepper

mix all ingredients (with your hands if you can!) and divide into six muffin holes in a muffin pan (spray them first). bake at 450 for 25-30 minutes.
we usually have this with a veggie or two.

shredded bbq chicken

i love this one because its so easy and so yummy!

-however much chicken you want to use.
-however much bbq sauce you want to use.

put it in a crock pot for 6 or so hours. then shred the chicken with 2 forks. eat it on bread/bun (with pickles and onions if you are me!) we usually have potato fries with this…cut up potatoes with seasoned salt baked.

and my hubby’s fave Italian parmesean chicken

-however much chicken you want
-3/4 cup italian dressing
-3/4 cup parmesean cheese

mix the dressing and cheese together and marinate the chicken for 30ish minutes (sometimes i skip the marinating and just shake the chicken up with the sauce in a bowl with lid and it still tastes delicious). bake at 450 for 20ish minutes or until its not pink anymore.

we usually have this with seasoned spaghetti noodles or quinoa or couscous and a veggie.
